Vegans have the run on practically everything on the plate these days especially desserts. So far, we've covered a variety of veganized dessert types here. One example is this recipe for a vegan pound cake with a yogurt glaze. This time around, we'll be looking at a super simple way to make a quality American vegan parfait. Like most recipes already covered here, this tale of an American classic only requires the smallest adjustment to be made suitable for vegan tastes. Hence, super simple.
Making a vegan parfait
A vegan parfait isn't challenging since it's as simple as a regular parfait.
That is if it's done American style. An American parfait doesn't do much justice to the French variant in terms of skill. The former is simply made by layering yogurt, granola, fruit and/or whipped cream in a glass as opposed to cooking up a custard base like the latter. However, because of its simple build and the quality of the foods assembled, there hardly anything displeasing about an American parfait.
To make a vegan parfait, one only needs to replace the dairy component with a non-dairy version. In this case, the yogurt in the recipe will require the switcheroo. There are a plethora of non-dairy yogurts being sold today. Just look for the "non-dairy" stamped somewhere on the label. From there, the rest is history.
Just build the parfait by layering each component previously detailed in whatever order that's prepared and voila.
The recipe
Ingredients:
- 2 cups non-dairy yogurt
- 8 large fresh or frozen strawberries, halved
- 16 blueberries
- 16 black berries
- 2 tbsp powdered sugar
- 1 cup granola
Equipment:
- 1 sharp chef knife or pairing knife
- 4 parfait glasses
- 1 piping bag (optional)
- 1 dessert tablespoon
Directions:
- Cut the strawberries in halves with a sharp knife. Combine the strawberry halves, blueberries, blackberries and powdered sugar in a bowl. Toss the fruit around in the sugar and set aside to extract the juices for 10 minutes.
- To build the parfait, start with a fruit layer. Spoon or drop 4 strawberry halves, 4 blueberries, 4 blackberries and 1/4 of the mixed juice per glass. Next, pipe or spoon 1/4 cup of the non-dairy yogurt over the fruit in each parfait glass to make the yogurt layer. Spoon or drop 1/8 cup of granola on top of the fruit layer. Repeat the fruit to yogurt to granola layer order with the remaining ingredients to form six layers in the parfait glasses.
- Serve the parfait immediately or seal and refrigerate.
