What is Fettuccine Alfredo?

For most, Fettuccini Alfredo sounds complicated just by its very pronunciation, but it really isn't. Basically, this is a cheesy pasta dish named after its creator, Alfredo di Lelio who came up with the dish back in early 20th century Rome.

Usually, pasta dishes consists of pasta immersed in a sauce. And in the case of Fettuccine Alfredo, we have fettuccini tossed with a buttery, creamy, Parmesan sauce.

The sauce is made by combining butter/oil, aromatics, meat/fish, cream, parmesan cheese, herbs and seasoning in a skillet. Once the sauce thickens, it is then tossed with fettuccini pasta that is cooked to al dente (firm to the bite), completing the dish.

  • 1 pound fettuccini pasta
  • 1 pound cooked shrimp, peeled and deveined
  • 2 tablespoon olive oil
  • 1 large green onion
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 6 tablespoons Parmesan cheese, grated
  • 1 tablespoon fresh parsley, chopped
  • 2 pinches nutmeg
  • Salt and pepper as needed

Directions

  1. In a large pot, bring lightly salted water to a boil. Add the pasta and boil for eight to ten minutes or until al dente. Drain and set aside.
  2. In a large skillet, medium heat the oil, then saute the shrimp, onion, and garlic about one minute. Add the heavy cream and stir.
  3. Add the Parmesan cheese in one tablespoon at a time while stirring constantly. After all the cheese is added, mix in the parsley, salt, and pepper and stir. Simmer the sauce and stir frequently until it thickens.
  4. When sauce has thickened, combine with cooked pasta noodles; serve hot.
