Cocktails can be pretty versatile whereas they can be converted into other drinks or foods. Dessert drinks especially can become other desserts with little work or even imagination. Last time, I covered a recipe for a mudslide, a chilled dessert cocktail that made with a blend of vodka, coffee liquor, Irish cream, and ice cream. For today's trick, I will be taking this popular dessert drink and converting it into a parfait, another dessert I covered in some recipes here.

For those unfamiliar with a parfait, it's pretty much a handful of other select chilled desserts layered in a glass and isn't challenging to pull off.

For a wonderful example, check out this simple cheesecake parfait recipe I wrote. As for this variation, the layered build will start with the mudslide for the bottom layer, followed by a whipped cream layer and garnished with a chocolate syrup swirl around the inner ring of the parfait glass. Again, simple.

The recipe

Mudslide Ingredients:

  • 4 oz vodka
  • 4 oz Kahlua
  • 4 oz Baileys Irish cream
  • 4 oz ice cream
  • Chocolate syrup for swirl

Creme Chantilly Ingredients:

  • 2 cups heavy cream, cold
  • 2 tbsp powdered sugar
  • 1/2 tsp vanilla extract

Optional Garnish Ingredients:

  • Oreo cookies, crushed
  • Strawberries, blueberries or raspberries (one per glass)
  • Cherries (one per glass)

The directions

  1. To prepare the mudslide cocktail, combine all ingredients in a blender and process until smooth. Keep the blender jug lid on, remove from the machine and place in the refrigerator to chill.
  2. For the whipped cream, place a bowl and a whisk over an ice bath and let them chill for 5-7 minutes before starting. Pour the heavy cream in the chilled bowl and whisk it until it volumizes. Add the powdered sugar and vanilla extract to the whipped cream and continue whipping until it turns thick. Seal the bowl with plastic wrap and chill in the refrigerator for 30 minutes or more before moving on to layering the parfait.
  3. Swirl the chocolate syrup around the center and top inner regions of 8 parfait glasses and chill along with the whipped cream for the same period.
  4. To assemble the parfait, start by pouring 4 ounces of the mudslide into each glass to form the first layer. Next, spoon eight tablespoons (4 ounces) of the whipped cream over the mudslide layer to form the second layer. When it's time to serve the parfait. Additionally, you can garnish the mudslide parfait with fruit like berries and cherries or with crushed Oreo cookies if desired.
