There are a lot of interesting things that could happen to potatoes while they're in a kitchen. They can be crushed for mash or stuffing. Or be julienne and deep fried for some French Fries. They can even be turned into a base for a dessert. Food can get pretty crazy sometimes. However, the simplest approach with potatoes will just do. Take garlic roasted potatoes for example.

One can simply cut the potatoes in halves or quarters, season them, and roast them with garlic, parsley, and other foods for a simple dish. Today's recipe is as simple as it will ever get, and will include some equally simple variations for everyone to try.

The recipe

Ingredients

  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 2 lbs white potatoes, peeled and quartered
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 2 tbsp parsley, chopped
  • Salt and pepper as needed

Directions

  1. Preheat the oven to 204 °C.
  2. Quarter the potatoes and put in a bowl. Mince the garlic and chop the parsley. Add the garlic and parsley to the bowl. Sprinkle the salt and pepper over the potatoes in the bowl.
  3. Pour the oil over the ingredients in the bowl and toss to coat the potatoes.
  4. Transfer the coated potatoes to a non-stick baking tray or one sprayed with cooking spray. Spread the potatoes out evenly.
  5. Roast the potatoes, flipping them in between for 45 minutes or until they turn crisp and brown.
  6. Transfer to a bowl and toss with the parsley, salt, and pepper. Serve the garlic roasted potatoes hot.

Variations

  • Potato wedges - Cut the potatoes halfway lengthwise and cut four wedges out of each half.
  • Rosemary - Substitute garlic powder and rosemary for the garlic cloves and parsley.
  • Roasted chicken - Place the potatoes into a roasting pan instead of on baking tray. Sprinkle 1 teaspoon of paprika over 2 pieces of chicken breasts or thighs. Place the chicken over the potatoes and cover before baking.
  • Parmesan - Add 1/2 cup of parmesan cheese to the bowl before tossing in Step 2.
  • Roasted carrots - Add 1 pound of whole baby carrots to the bowl before tossing. How about a simple carrot soup recipe as well.
  • Roasted broccoli - Add 1 pound of broccoli crowns to the bowl before tossing.
  • Roasted apples - Add 2 cubed apples to the bowl before tossing.
  • Onion - Add 1 onion cut in chunks to the bowl before tossing.
  • Pesto - Add 1/4 to 1/2 cup of Pesto to the bowl before tossing.
  • Hollandaise - Serve the finished garlic roasted potatoes with Hollandaise sauce.
  • Bechamel - Serve the finished garlic roasted potatoes with Bechamel sauce.
