For every recipe, there's a vegan spin on it, and this goes especially desserts. I already covered a few here ranging from those popped into an oven to those popped into a freezer. For my next endeavor, I will show you a simple way to make a vegan fruit sherbet. A fruit sherbet is a frozen treat much like a fruit sorbet but is made to include dairy for a creamier taste. However, this one won't be using any dairy at all.

Making a vegan sherbet

Obviously, any food with the word "vegan" or "non-dairy" in the title are those made simply by swapping its dairy ingredients for the ones labelled as such.

There are a lot of substitutes to choose from (oats, soy, almond, etc.) but the one I opted for this recipe is coconut milk. It's thick like heavy cream and can even be whipped for bigger volume just like its dairy counterpart. I've used this specifically for vegan desserts that require it like my vegan ice cream recipe for example.

Another reason I chose coconut milk is that it goes quite well with some fruit desserts, making it a great choice if you're really into them like I am. Now on to the point: The recipe below can work with almost any fruit you desired (check out the list of variations included with it) and is quite simple to follow. Just make sure you have a working ice cream maker or slush machine handy.

The recipe

Ingredients:

  • 1 lb fruit of choice, fresh, frozen or canned (no syrup)
  • 1 1/4 cup sugar
  • 1 tsp lemon zest
  • 2 cups cartonned coconut milk, unsweetened

Directions:

  1. Wash the fruit and dry in kitchen cloth. The drain of water if it's canned. Slice the fruit into smaller portions if necessary.
  2. Place all the ingredients into a blender and process until fully combined.
  3. Pour the mixture into an ice cream maker and process according to the manufacturer's instructions.
  4. Scoop the sherbet into a pan and freeze for an hour.
  5. Serve with corresponding fruit.

Serves: 6-8

Variations

  • Berry - Use berries (raspberries, strawberries, blueberries, etc.) as the fruit of choice.
  • Raspberry and Chocolate - Use raspberries for the fruit. Substitute chocolate flavored coconut milk for coconut milk.
  • Mango - Use 1 can (15.5 ounces) of sliced mango (no syrup) as the fruit of choice.
  • Creamy Coconut - Use flaked coconut as the fruit of choice. Substitute coconut cream for coconut milk.
  • Rum and Coconut - Use coconut chunks as the fruit of choice. Add 1 tbsp white rum.
  • Citrus - Substitute lemon/lime/orange juice as the fruit of choice.
