A milkshake is super dumb when it comes to complexity. As I already pointed out in my simple milkshake recipe, it's just ice cream and milk/cream combined in equal parts in a blender. However, this simplicity can also make brewing up one seem a little boring to some foodies out there. That's why it's great to experiment with these simple desserts. One fun and interesting take on the recipe I discovered involved a combination of rum and espresso.
There are already a ton of drinks that bring these two together including milkshake. Just look for any cocktail with "rum espresso" or "coffee rum" in the title.
There are also desserts that do the same so it was only a matter of time before a dessert drink got thrown into the mix. Below is my very own rum espresso milkshake you will definitely enjoy. Fast, simple and oh-so-delicious.
The recipe
Whipped Cream Ingredients:
- 1/2 cup heavy cream
- 2 tsp powdered sugar
- 1/2 tsp vanilla extract
- Cocoa powder for garnish (optional)
Drink Ingredients:
- 4 scoops (2 cups) vanilla ice cream, softened (retail or homemade [VIDEO])
- 1 shot (1/4 cup) instant espresso
- 1 cup milk
- 2 tbsp dark rum
The directions:
- To prepare the whipped cream, place a bowl and whisk over an ice bath to chill for 10 minutes. Combine the heavy cream, powdered sugar and vanilla extract in the bowl and whisk together until it forms stiff peaks. Cover the bowl with plastic wrap and chill in the refrigerator.
- Remove the ice cream from the refrigerator and let it sit out in room temperature to soften before blending.
- Brew the instant espresso according to its instructions. Remove the espresso from the heat and set it aside to cool.
- Combine the scoops of ice cream, brewed espresso, milk and dark rum in a blender and processed for 5 seconds. if the milkshake is too thin, add more ice cream by the scoop. if it is too thick, add more milk.
- Pour the milkshake into two glasses, filling each up to 3/4 volume. Top each glass with the whipped cream and garnish with the cocoa powder if desired.
Serves: 2
Check that any guests visiting you are fine to consume alcohol.
Variations
- Jamaica - Substitute brewed coffee for the brewed espresso.
- Carajillo - Substitute Brandy for the dark rum.
- Chocolate - Add chocolate syrup (as much as you like) to the mixture before blending in Step 4.
- Cafe Doble - Add double espresso.
- Spiced - Add a pinch of nutmeg, cinnamon and ground clove to the mixture before blending in Step 4.
- Dark Moon - Add 1/2 cup of coke to the mixture before blending in Step 4.
