Last time I revealed how to make a fast and simple Apple Crumble in the kitchen. Now I want to share with you a quicker and simpler recipe for Apple Pie. Compared to the former, this recipe is by far the most popular one to have during the appropriate season but not usually as fast and simple to prepare until now.

Like Apple Crumble, the pie filling (apples, sugar, spices, and citrus juices) is usually slow cooked before covered in the streusel and baked. However, the following recipe calls for the filling to be tossed in a bowl as opposed to being slowly cooked, saving some time.

For those who want to save more time, they can buy an unbaked pie shell from their grocery store instead of making one. That leaves the streusel topping which can be made simply by stirring everything together in a bowl.

The recipe

Crust + Filling Ingredients:

  • 1 unbaked pie shell (9-inch)
  • 6 tart apple, peeled, cored, and cubed
  • 6 cups cranberries
  • 1 tsp orange juice
  • 1 tbsp orange zest
  • 1/s cup granulated sugar
  • 1/2 cup brown sugar
  • 2 tsp ground cinnamon

Streusel Topping Ingredients:

  • 1/2 cup flour
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 tsp cinnamon
  • 2 tbsp unsalted butter, cold and cubed

The directions

  1. Preheat the oven to 190°C. Unpack the unbaked pie shell and fit into a 9-inch pie dish.
  2. To make the filling, core the apples, then cut into 1-inch cubes. Toss together the cubed apples, cranberries, orange juice, orange zest, sugars and cinnamon in a bowl.
  3. Transfer the tossed fruit to the pie shell and cover with a kitchen cloth for now.
  4. To make the topping, stir together the flour, sugars, and cinnamon in a bowl. Cut in the butter cubes with a pastry blender or fork until it forms a coarse meal.
  5. Uncover the pie and sprinkle the streusel topping over the filling until fully covered.
  6. Bake the pie for 25 minutes or until the topping turns golden and grainy and the filling is bubbling. Remove and cool on a rack.

Serves: 8

Variations

  • Rhubarb - Add 3 slices of fresh or frozen rhubarb (cut into 1-inch cubes) to the tossed filling in Step 2.
  • Cranberry - Add 6 cups of fresh or frozen cranberries to the tossed filling in Step 2.
  • Applesauce Filling - Slow cook the filling in a saucepan as opposed to tossing it in a bowl. Add 1/4 of water to the saucepan before cooking.
  • Ginger - Add 1/2 teaspoon of ground ginger and 1/2 teaspoon of nutmeg to the tossed filling in Step 2.
  • Caramel - Drizzle 1/2 cup of caramel over the streusel topping after it is sprinkled over the filling in Step 5.
