Easter can never be an Easy holiday to bake for, especially if you are the one doing all of the work. Coconut is one of the key ingredients found in easter dessert recipes. Here are some easy recipes with coconut, where you can use store bought items for or make yourself. These recipes are sure to impress anyone you have over for Easter.

1) Coconut Nest Cupcakes

Ingredients:

  • Cupcakes
  • Buttercream frosting
  • A Bag of Coconut
  • Robin Eggs

Directions:

1. Bake your cupcakes, once it is done let it cool for 30 minutes.

2. Put half of the bag of coconut on a sheet pan covered with parchment paper.

3. Cook the coconut at 375 degrees for 10 minutes, or until a light brown color, once finished take out of the oven and let cool.

4. Once the cupcakes are completely cool to touch, begin to frost the cupcake, you want to give them all a generous amount.

5. With a spoon put a circular indent into the top of the frosting.

6. Take the coconut and begin to cover the frosting, make sure to put it inside the indent you made with the spoon.

7. Put the Robin eggs into the indent, and serve!

2) Bunny Ear Cupcakes

Ingredients

  • Cupcakes
  • Buttercream Frosting
  • Coconut
  • Marshmallows
  • Fine Pink Sprinkles

Direction

1. Bake your cupcakes, once it is done let it cool for 30 minutes.

2. Frost the cupcakes, with a wide tip, so that the frosting is smooth.

3. Sprinkle coconut onto the frosting, so it is completely covered.

4. Cut the marshmallows in half horizontally.

5. With a knife spread a small amount of buttercream onto the cut side of the marshmallow.

6. Dip the marshmallow into a bowl filled with the pink sprinkles, to create ears.

7. Place two ears on the top of the cupcake, about a centimeter and a half apart, and serve!

3) Coconut Macaroon Nests

Ingredients:

  • Macaroons
  • Wilton Light Cocoa Candy Melts
  • Robin Eggs

Directions

1.Gently, with a spoon make an indent in the macaroons.

2. Follow the directions on the bag of candy melts, to melt the candy.

3. Dip the bottom of the macaroons into the melted chocolate.

4. Place the macaroons upside down with the chocolate up, and let dry.

5. Flip the macaroons right side up, and drizzle the rest of the candy melts onto, you may have to reheat it.

6. Place a couple of Robin eggs into the indent, and serve!

4) Cookie Chocolate Mousse Peep Nest

Ingredients:

  • Sugar Cookie Dough
  • Chocolate Mousse or Pudding
  • Sweetened Coconut
  • Green Food Coloring
  • Peeps

Directions:

1. Flip over and grease the bottom of a muffin or cupcake pan based on personal preference.

2. Roll out the cookie dough until it is about about a centimeter.

3. Cut circles out of the dough and place them around the outside of the pan.

4. Bake the cookies on the pan, and then let cool for 10 minutes, after 10 minutes take them off of the pan carefully and get on a rack to complete cooling.

5. Prepare mousse or pudding if necessary.

6. Dump the bag of coconut into a bowl and add two to three drops and stir, repeat until preferred darkness.

7. Place the mouse in the bottom of the cookie cups, then sprinkle the coconut onto of the mouse, place the peep on top, and serve!
