Preparing the potato egg salad is simple
To begin, you need to boil one pound of halved new potatoes for 10 minutes. Next, add four eggs to the water; then remove from heat, cover, and allow to sit for 10 minutes. Pour in one cup of frozen peas; and cover for 60 seconds. Drain; peel and quarter the eggs, then toss with two teaspoons of lemon juice, three tablespoons olive oil, and add parsley and mint. Sprinkle a little pepper and salt.
You now have a salad with potatoes and eggs that was prepared in much less time than the traditional potato salad recipe. Remember that you can always add the spices and garnishes that please your pallet.
If you need more than four servings you can simply double or triple the recipe depending on how many people you plan to feed. This is a meal hack you will probably want to utilize more than once after you try it.
Variations to the potato egg salad recipe

You may choose to boil the eggs and potatoes separately or add another vegetable instead of peas. Perhaps you want two or even three veggies along with the eggs and potatoes.
